Leek and potato soup is an international dish and one of the most popular types of leek soup. To make this French appetizer, you first need to prepare the necessary ingredients.



Ingredients for leek and potato soup for 4 people


4 large fresh leeks

2 medium potatoes

Garlic 2 or 3 cloves

Butter 3 tablespoons

6 to 7 glasses of chicken or vegetable broth

1 or 2 bay leaves

Cream 1 cup

Large fresh leeks

Enough salt and spices, including thyme powder and black pepper.


The first step of how to make leek and potato soup

First, you need to choose fresh leeks to make the soup. Fresh, high-quality leeks have white and light green colors. The appearance of this leek is healthy and if you squeeze it a little in your hand you will notice that it is a little firm. Also, you should choose leeks whose roots have not yet been separated. Small leeks taste better. Leeks that have yellow or dry leaves are also not suitable for cooking.


Second step: frying the leeks

To make leek and potato soup, you need to chop parts of leeks that are white and light green in color. Now we sauté the chopped leeks with the crushed garlic and butter in a pot. The leeks should soften a little but not change color.


Third step: add other ingredients

Once the leeks are soft, add the diced potatoes to the pot along with the chicken or vegetable broth, salt, spices and bay leaves. Close the lid of the pot and let the potatoes cook completely.

When the potatoes are fully cooked, remove the soup from the heat and let it cool a little. Then, pour the entire contents of the pot into the blender until it becomes puree and has a smooth and uniform texture.


Next, we add the puree ingredients back to the pot and put it on low heat. Now add the cream to it and let the soup boil a few times with the cream. Finally, pour the leek soup into a bowl and garnish with chopped chives.
